No, I forgot to take it of the freezer last night last night like a moron, so I sous vide it. I love ribeyes sous vide to like 133-135F anyways, though. Depending upon thickness cook it to the target temp for an appropriate time, pull it and put it in the fridge for like 20-30 minutes. Take it out and let it get to room temperate, season and sear for about 1 minute 15 seconds a side and let rest.

It may seem bizarre to cool it and then let it get back to room temp, but it stalls the cooking process to help keep the meat at the target temp. Then letting it get to room temp let’s you reheat it perfectly with a quick and hard sear.

Oh and Chatham Sea Salt
