It's the basis for all french cuisine... the innards. Comes from the time of the revolution where most french inhabitants didn't have access to the good cuts. They needed to find a way to make the leftover crap tasty.

It's the basis for all french cuisine... the innards. Comes from the time of the revolution where most french inhabitants didn't have access to the good cuts. They needed to find a way to make the leftover crap tasty.

i once ate lobster with a guy from Caraquet NB. never seen anything like it in my life. literally the only thing left was pieces of dried lobster shell. the Acadians do not (frank) around with lobster.

Wasn't it some bumhole in New York city that turned lobster into "elite" food because he had a surplus and they were cheaper than dirt.

En fait, si le homard est aujourd'hui assimilé à un produit de luxe, on le doit beaucoup au développement du chemin de fer aux États-Unis, vers la fin du XIXe siècle. C'est l'époque où l'on commence à servir les premiers repas à bord des trains qui traversent le pays d'une côte à l'autre. Les dirigeants des compagnies de trains de l'époque, inventent le rebranding d'aliments et ont la bonne idée de servir du homard aux passagers des trains en le faisant passer pour une denrée exotique et à la mode. Pas bête, car d'une part, le homard demeure encore peu coûteux et d'autre part, ces passagers ne connaissent pas la réputation exécrable du crustacé de ce côté-ci du pays.
