Three Bean Salad



1 15-oz can cannellini beans, rinsed and drained
1 15-oz can kidney beans, rinsed and drained
1 15-oz can garbanzo beans, rinsed and drained
1/2 red onion, chopped fine (about 3/4 cup), soaked in water to take the edge off the onion
2 celery stalks, chopped fine (about 1 cup)
1 cup loosely packed, fresh, finely chopped flat-leaf parsley
1 teaspoon fresh finely chopped rosemary

1/3 cup apple cider vinegar
1/4 cup granulated sugar (more or less to taste)
3 Tbsp olive oil
1 1/2 teaspoons salt
1/4 teaspoon black pepper

1 In a large bowl, mix the 3 different types of beans, the celery, onion (drained of soaking water), parsley, and rosemary.

2 In a separate small bowl, whisk together the vinegar, sugar, olive oil, salt, and pepper. Add the dressing to the beans. Toss to coat.

3 Chill beans in the refrigerator for several hours, to allow the beans to soak up the flavor of the dressing.

I made some pickles last night and they turnt out great

1/2C white vinegar
2 tbsp sugar
1 tbsp minced garlic
4 of those little wiener sized cucumbers
2 tbsp chopped fresh dill

simmer the vinegar, sugar, and garlic on medium heat until it simmers.
Meanwhile, slice the cucumbers into about 1/4" slices. Chop dill and mix with the cucumbers in a heat resistant bowl/container. Once the vinegar mixture is simmering, pour the mixture over the cucumbers. Let refrigerate overnight

Ham Salad

1/2 cup mayonnaise, plus more if needed
2 tablespoons whole-grain mustard
1 pound leftover baked ham, cut into 1-inch
chunks
1 1/4 cups drained bread-and-butter pickle
chips and 1 tablespoon pickle juice, plus more
if needed
1 1/4 cups drained bread-and-butter pickle
chips and 1 tablespoon pickle juice, plus more
if needed
2 inner ribs celery, finely chopped, plus 2
tablespoons coarsely chopped leaves from
the inner ribs
1/2 small red onion, finely chopped


Whisk the mayonnaise and mustard
together in a large bowl. Pulse the
ham and pickles in a food processor until
finely chopped but not pureed. Add the ham
mixture, pickle juice, celery, onions and
celery leaves to the mayonnaise mixture,
and stir. Taste; if the salad seems dry (it
should be spreadable), add more
mayonnaise and/or pickling liquid. Serve as is or on sandwiches.
