curds are used and can be any type of cheese. Cheese is made from curds, how you cut the curds and age them yields the type of cheese produced. So, there is no "brand" of curds. ALL CHEESE IS FROM CURDS.

separate the curds from the whey (liquid milk)

correct, like i said, the bacteria and way the milk is soured has to do with the type of cheese as well and may be where the snobs try to distinguish the cheese, but the flavor of curds, in any cheese, is basically the same. it isn't until the finishing process does the cheese flavor really stand out.
