There are certainly cases where over-agers have played some NHL games, but I'm looking for over-agers who were drafted high and ended up being more than replacement level players.

There aren't too many and the data isn't that easy to come by. I looked at 2011 - 2018 using data from Spotrac because it at least has the player's current age, which you could use to calculate their age at the draft from the draft year . . .here are the notables:

Highest ranked overage player drafted in that period: Tanner Pearson #30 (Korshkov was #31).

Teams to draft the most overage players: Anaheim, LA both with 12; Leafs with 11.

Notable players (not in any real order, just maybe by their draft position); I've bolded the ones that stand out to me:
