I (frank)ing love foie gras

Just hand me foie gras and a spoon

Or fry two pieces of it and make a decadent double down out of it like joe beef used to

- TheMussel

Having Hungarian ancestry and visiting several times, I acknowledge that goose liver is a prized delicacy and quite expensive. Understanding how it is produced, might shape your views slightly, no matter how tasty though.

If they call this no goal in the Colorado game.

EDIT: Good. They made the right call.

Hilarious to me that not only the entire time the Minnesota crew didn't think it was a goal and now the Wilds coach is somehow pissed it's a goal.

Really not convinced that Beef Wellington is of British origin, but the pesto ingredient is gross. The spices and flavouring inside the pastry vary from recipe to recipe. Traditionally the French include a combination of foie gras and mushrooms, I prefer mushroom, shallots and sweet peppers with herbs. I'm not a big fan of fois gras no matter how fancy it is.

I’ve discovered a happy alignment, quite sure it’s coincidental, between my belief in the importance of simplicity in cooking and my increased laziness. Making crispy gnocchi with burst tomatoes and mozzarella. Fry up the gnocchi in olive oil without disturbing them in pan till they’re golden on bottom. Cook some cherry or grape tomatoes in butter and garlic and chili peppers till they burst and make a sauce. Toss the gnocchi back in, add some basil and mozzarella and broil till cheese is melts.

Easy and nice or the lazy old guy.

I took several courses in culinary arts at George Brown while I was doing sommelier courses. I also have a cousin with whom I exchange recipes who is a world class chef. If you really love to cook, you will be good at it, if you feel it is work and do it to get food into you and or your family, the results might be so-so. I havem't met a great chef that hated cooking.

One of the best sauces is just throw a whole onion and some butter into a crushed tomatoes and simmer.

What astounded me every time we visited Italy was how good simply cooked meals can be if you have good ingredients. It’s one reason I’ve really gotten into growing my own. I’m eating my own lettuce and micro greens in salad. My cukes crapped out. About to try another approach.

But this is such a nice meal to meal. The textures of gnocchi that is crispy on the bottom. The burst tomato sauce is my go to (but I will try Zezel’s idea) and it just comes together with minimal fuss.

You're using LED lights, right? Having grown plants under sodium lights in the past, this looks like a quantum shift in technology. I'm looking at one of the smaller units just to do herbs, maybe greens or tomatoes. The LEDs change everything. These little automated hydroponic units look unbelievable.

For me fresh herbs is the single best thing for elevating simple meals. I've been chopping up dill and basil and throwing it into spring mix and tomato salads lately. Fresh thyme and parsley on everything. Fresh herbs rule.

I’ve got Click and Grow which is a Hydroponic system. It does a great job on lettuce and herbs. I just bought a sweet little hydroponic system for micro greens from a place called Urban Leaf. Three small containers with little disposable rugs and a batch of seeds for I think $35. You can reorder seeds. It’s nice sized so you don’t end up with too much at once and can do it in succession (Team Kendal)

I do the micro greens by the window and use LED for the potted plants (not Click and Grow which is a full system.). I think I’ve (frank)ed up with pots and drainage and my cucumber leaves got too wet. I might buy containers and go full hydroponic downstairs too.

When the LEDs burn out in those systems can you just replace the diodes?

Put a whole onion and butter in crushed tomatoes and simmer for an hour. Simplest sauce ever.

Oh I already do that.

If you don't mind it being bad for you, adding a bit of sugar is delicious too.

I think I have some razors because I want to try the goodfellas trick of shaving the garlic so thin it just melts.

I am somewhat torn about it from a moral standpoint but I've loved it when I've had it.

Henry Hill's cookbook is really fun and full of Goodfellas stories and great Italian-American classics.

You can sweeten a sauce with finely grated carrot too.

I know I’m late but what if those peas were sweetlets? I wouldn’t mind that.

If I was a guest and someone served me a dinner like that for free I’d be the last to complain lol
