My buddy at work came back from the Holidays in Dryden and brought back some moose sausage he made. Fantastic.

I went on a hunting trip to Alberta a few years ago. When they picked me up at the airport, they had these Moose sausage, about the size of a hotrod... OMG, one of the best things I have ever tasted.

This works well and better chefs use this technique - need a good fan to not smoke up the house though. Searing in butter and seasoning while searing is great. A great BBQ is tough to beat though.

Every year, I'm tempted to get a coal BBQ.

I think I'll just get a cheap one, and see if I actually like it.

I have a couple of friends who are elite members of the Green Egg cult (like, Tom Cruise-level). They keep nagging me to get one for the backyard.

BBQ needs replacing, but I think I'm going to go back to propane. We currently have natural gas, but the location isn't great. I like the idea of getting a propane one again, so I can move it around - put it next to the pizza oven when we are having people over in the summer, but move it to next to the doors for the winter.

So many tricky decisions - it's tough being a lame middle-aged guy.

My BBQ has a smoker tray for chips. I have maple, cherry and hickory chips all pretty good.

I think I'll just get a cheap one, and see if I actually like it.

I have a couple of friends who are elite members of the Green Egg cult (like, Tom Cruise-level). They keep nagging me to get one for the backyard.

also my cousin has a big green egg. he rigged it with a fan attached to the lower air vent hooked up to a thermostat on the upper griddle. The fan blows air into coals whenever the temp dips below target, so you have a charcoal big green egg with precise temperature control

Green Egg is outstanding. You lose some level of convenience but they are great IMO.

We have a Q pit out my at camp. We have been using it since the camp was built in 1936. The flavours that come out is like nothing else I have ever tasted. Best steaks I have ever had. All done over maple split and burnt down to coals. We Q every trip out. Nice bottle of wine, Toss in potatoes and onions as it is burning down.

They look sketchy, but great. The meat is almost black

He cut it with pork. Kind of like how you cut bear with venison.

its a 6th (in 2022)
he appeared in 25% of the Leafs playoff games

but a big whiff on a 1st, 4th, 4th and 6th for rentals

id stay away from rentals

That would be from the way it was processed. Moose meat is not black in general.

My wife took a cooking course at George Brown (poop, must be 20 years ago now).

They taught her to sear a steak with your frying pan on stove top, then pop it in the oven at a lower temperature.

We haven't done a steak on the BBQ since.

Although I'm still trying to get up the guts to do one in the pizza oven, with various cast iron pans.

Ya this is usually how I cook the steak, get to room temp, salt/pepper, sear both sides for a couple mins...then toss in the oven.

I hear ya. Every family member and pretty much everyone I know will only eat it well done. My Dads the worst thou, cooks it till its well done and then cooks it a little shoe leather more. He still argues every time you bring it up about how real steak should be hard and chewy and anything else is a waste of good beef and disgusting....

I havent tried it indoors yet.
I did it on the Q over the summer with indirect heat.
Turned out ok, but took longer.

On the bright side, you can save money by just buying him a slice of round roast instead of a top sirloin or ribeye
