So how do you post pictures on here? Been using my homemade smoker a lot and it seems this is quite a food forum.

I think he's an underrated coach. He wasn't necessarily the right coach to get the Caps over the hump like Trotz was, but I think he took those caps teams as far as they were capable at the time.

I think he's a good coach. Got a lot out of some mediocre Minnesota rosters, and his top players other than Ovi often failed him in playoffs in Washington. Nice to see him get another job.

Smoked duck with wings going on the last 2 hrs. Smoked with cherry and applewood with some oak charcoal to speed things up. Since we didn’t do a turkey this year.

IMO he's a good coach in really knowing how to utilize players to their strengths.

I love duck. I picked up some duck prosciutto last weekend that was insane with some manchego and honey drizzled on it.

I bet the smoke flavor on that direct smoke is awesome.

Wuuuut. I've never seen duck prosciutto. I'm a huge fan of duck.

When I lived in Vegas they have a Thai place that does this crispy duck in panang sauce and it's easily one of the greatest things I've ever had.

Love duck. Would rather have that over turkey but no one in my family likes it.

Depends on the turkey/gravy tbh. I brined and smoked my turkey and made an apple cider gravy that was absolutely incredible.

Oh yeah I do an apple cider gravy every time I make turkey. I think the apple cider plays well with the thyme and rosemary herbs and now with the smoked turkey it gives you that little bit of sweetness usually associated with BBQ meats.

My stuffing is usually breakfast sausage/green apple/challo or pumpernickel bread stuffing so it works well with the gravy.

Although Matt at MeatChurch did an Alabama White sauce with a spatchcocked chicken I want to try with turkey soon.

We do an herb salt rub and let it sit for 24hrs, under the skin and on. Then cook it in an oil-less fryer. The skin comes out super crispy and it's always perfectly cooked. My smoker is too small for a whole turkey.

I only did like a 14 lb turkey. I've got a CampChef pellet grill and it fit perfectly on there. What the hell is an oil-less fryer? An air fryer?

Basically, yes. But the size of like a 10 gallon bucket so it can fit an 18 lb turkey. It's amazing for roasting/air frying things.
