Oh no, it's very right...
For someone like Peanut, who runs and probably likes lean protein after GREAT runs, I smoke meats like pork tenderloin low and slow, bringing them to temp but leaving them pink and juicy.
This is pork tenderloin brought to 145°F... Looks rare, but that's because I brought it up so slowly.

It's spinach, Roma tomatoes, pepper jack cheese, smoked jerk pork tenderloin, and mango chutney on a ciabatta bun, panini pressed just until the cheese gets melty.
