Yeah alcohol is kinda like salt where it helps bring out and amplify flavors. I did some barbecue wings on the grill yesterday with this fat tire bbq sauce I found a little while ago.

I still haven't gotten myself a sous vide device. I'm honestly running out of room in my kitchen. I had to buy a rack to keep in my kitchen for my pots and pans, so I don't know if I have room to get one of those buckets you need.

Sous vide is great because you can set it and forget it so long as you set the temp and timer right.

You so damn right about the space though. I’m waiting on a shelf unit before I start adding more tools to my kitchen.

I'm with Feds here, filets lack a lot of flavor compared to a ribeye, which is my favorite. Not that I dislike filets, but I usually put some goat cheese on them or make like a red wine reduction. Any time I eat a filet alone, I just ask myself why I didn't just make a ribeye.

Ribeye is the best, but I eat filet very often. I like buying whole tenderloins and cutting into steaks myself. Agreed on it not having as much flavor but I usually do it with lobster, so a little butter on top to finish it works perfect.

Cooking I'll cast iron sear one side on the stove top flip toss on a dollop of butter (w/ fresh thyme and sage when I have fresh stuff growing)and throw straight into the oven for another 4-5 mins depending on thickness. There are better ways to do it I'm sure but this is a quick, easy method that always turns out well for me.

I moved back to NJ a year ago and I've been renting until I figure out where I want to settle. I'll probably buy next year, so the kitchen will be a huge factor for me.

I used to do it Sous Vide and thought it couldn't get any better but I actually prefer cooking it in the oven reverse sear style now. Put in a leave in thermometer until it hits 127f, pull it and then sear it in a cast iron. Crust is incredible. A little bit of Maldon's sea salt flakes and it's amazing.

I shall be trying this method. I've done lots of searing first but not this reverse stuff, and really, it makes sense now that you've mentioned it haha.

Au Poivre is a french steak dish where you coat the steak in crushed peppercorns, pan seared, then you make a sauce with the drippings by adding cognac, shallots, cream and a little broth. You can pretty much use any cut. I've seen it from basic sirloin to filet. I used NY strip.

I've been going through a 100 cocktails scratch off and one of the drinks called for some cognac that I now don't really know what to do with. Using it for some sauces sounds like a pretty good idea.

Was it a sidecar or a sazerac? Those are the only decent cocktails I can think of with brandy/cognac. There's a Brandy Alexander, too, but that's basically a milkshake lol.

Cognac is great for cooking and baking.

I think Hextall will communicate better with Sullivan compared to JR so I think we will be making deals for players with some input from Sullivan as well. I think JR acquired some players with little input from Sullivan. Hextall seems like a different GM.

No it was this thing called a snowball that needed this thing called advocaat which is essentially the Dutch version of eggnog. I needed the cognac/brandy to make the advocaat. The cocktail was actually incredible. Tasted like key lime pie. My dutch buddy from grad school got a real kick out of the fact that an American knew about advocaat, let alone made some.

But yeah both those cocktails are also on the scratch off, and then after that I really don't know what to do with the rest of the cognac.
