I made it Tuesday night and put it in the fridge last night. I wanted it to stay a little on the crunchy side and I was already seeing bubbles. It's decently hot but not overwhelmingly so. I am getting some korean pepper flakes this weekend and I will make a jar with Napa cabbage this time. I used Bok Choy by mistake this time.
