goalies don't usually bring a huge return, Murray was injured a lot. could be a good deal for OTT.

When they get heavily hot smoked. I'm only doing them for 1/2 hour hot smoke, then I'm turning off the element and almost cold smoking for the 2nd 1/2 hour. This way, they'll retain most of their shape, get a nice hint of smoke, without hitting the chipotle range.
