Not true. As someone mentioned before, RW cherry picked his worst stat and threw on his blog. Matheson was pretty decent in other areas. I'll try to find the link.

Yeah I’ve seen all the stats from all the guys I follow on Twitter. The dude is a younger version of JJ. Gets by on skating ability and talent but lacks any kind of hockey IQ and awareness.

Brine is a science and the only reason for it is to get salt penetration to help moisture loss while cooking. Salt, sugar, water is all you need. For pork, I generally will use a little molasses as well. Here is the deal with brines; nothing else will penetrate meat except for salt. Even sugar molecules are too big to penetrate meat. Rosemary, black peppercorn, bay leaves, all that stuff will impart some nice aromatics, but none of it is getting into the meat. To me, it's a waste of product. The sugar is added to a brine to help facilitate salt penetration, it also does not impart anything unto the meat, once washed off.

TLDR: Salt, sugar, and water is all you need for a brine. I am also a huge fan of brining. (Brine your own chickens and smoke them, and find out that all the chicken BBQ you've ever had was (frank)ing garbage.)

Butcher paper is the way to go if you want a crunchier bark I believe. Foil can trap too much steam and make it soggy.

What are ya'll crutching? I don't like butcher paper because it gets soggy on the bottom. I really try not to crutch my briskets. I may do it on pork if it stalls.

Nah I’m only a few into that one. Those are a bit slower. I like the competition ones because I don’t have to pay attention. Been bouncing between Raised by Wolves too.

Those turnovers are damning, especially for the Pens who were already experiencing so many. Isnt he one of the best at takeaways though? Wheres that stat?

EDIT: I should also say that top 40 in the other stats surprises me.

poop I’m not crutching anything. I cook everything in my Sous vide lol don’t have the space for a smoker at the time but a kamado is definitely in my future.

Yeah I saw that. I feel like a lot of people are going to be more upset after watching him. People get upset with Letang turning the puck over, wait for this guy hahaha. Sure he does a few things alright but it’s not 5m x 6y alright. I’d rather look for another middle 6 forward than aquifer the 27377473 LHD

I guess the trade will be more telling once we see if he can turn the corner and actually be a decent Defender for us.

A lot of writers have stated Pens will be moving a LHD out within the next few weeks. LA is rumored to be looking for a LHD. Maybe we can make a deal.

General go-to for whole chickens and pork butts is overnight. You don't want to overbrine, but that will mostly be from having one that is too salty.

To answer the ratios; 1 gallon of water, 1/2 pound salt ( I like Morton's Kosher), 1 cup sugar. You can take a cup or two of water and heat it up with the salt and sugar to dilute, cool down, then add.

Dry brining is also a proven method as well, and might be better for at-home barbeque, economically and space-wise.

On Brisket? No, I only wrap if it hits the stall. I also only wrap my butts if it stalls. Never crutch ribs. Always spritz. I like apple cider for the aromatic, but water is fine.
