Btw, Pete... Sous vide probably is great for chicken, but it's hard to screw up pork, if you cook it slow. For the leaner cuts, just remember the parasites are no longer an issue, so you don't have to cook it beyond medium, medium well at most. I smoke tenderloins all the time, they turn out great. |

it used to be a religious thing, but it slowly evolved into a national holiday, hence why they wanted to change the name, coupled with a few secular initiatives...

I was raised catholic until I reached the age of reason (thanks Carlin) so I know what SJTB day is...the national part of Fête National is what I'd be questioning |

well, " Fête de la société distincte du Québec" sounds turrible... it's been recognized in Canada that Quebecers are a different nation, so they call it fête nationale even though Quebec doesn't have it's independence (yet... lol)
