If I may, a sous vide separates the men from the boys when it comes to steak.

124 for an hour, salt, pepper, into a cast iron pan or onto a grill (lid open) that's hotter than a $2.00 pistol.

45 seconds, quarter turn (gives that nice diamond pattern on the grill), 45 seconds, flip, repete

Finish with Darky's butter, same recipe, but with fresh thyme.

That is all.

They had Wagyu tomahawk steaks at Costco the other week. I was sooo tempted, but there's no way its be able to finish it, and nobody in my house would properly appreciate it. God, they were beautiful though...

Sous vide is great. Can't argue that. Not just for steaks, for almost any protein

You're a thyme guy, eh? I personally prefer finely chopped fresh rosemary. Goddamn it, now I'm hungry.

For sure.

It really eliminates that fine line between done to perfection and (frank)ing shoe leather.

Especially with pork and chicken.

why would you buy thin steaks? it's impossible to get a char without cooking it through. what in the actual (frank) were you thinking?

i was starting to cut carbs that day so i walked in the supermarket and bought every steak that looked decent. some are cuts that i'm not familiar with.

Don't get a cheap one, we borrowed a friends Kuraidori at the lake, it's a pos.

I got an Anova for Christmas a few years back, it's awesome, phone app and all.

Dude, if you're cooking steak indoors, and it's a thin steak? Pre-heat your oven as high as you can, then sit a cast iron pan in it for 30 minutes or so. While that's happening, make sure your steaks are at room temp, and pat em dry. Then, pan comes out of the oven, and onto a cranked stove element, or high heat if you have a gas stovetop. Season w/ salt & pepper, then hard sear those bad boys. It'll take no time to get that nice crust, then remove and let em rest. While they rest, since your Italian and want to add garlic to everything, have a compound butter ready. Take softened butter, fresh parsley, and roasted garlic paste and blend together well. Make a sausage out of it in saran wrap and put in the freezer to harden. Then, any time you make a steak, take a slice and throw it on top of your steak while they rest. You still get the flavour, but the garlic or parsley won't burn on you.

Sadly they'll likely end up with some two person combo of Lafreniere, Byfield and Drysdale and immediately lap the Habs rebuild
