I made my own corned beef from scratch this month. Broke down a whole packers brisket and made two corned beef pieces. I froze the best part untouched to make pastrami with soon. Each piece was close to 5+ pounds. |

You might not approve since I brined it with pink salt #1. I wanted that bright coloration though. It was awesome. One I used brown sugar and pickling spices. The other I used pickling spices and whole garlic. |

Yep, soy is estrogenic, not to mention the vast majority survives Agent Orange.
Also avoid bottled water. BPA was discovered to be an estrogen replacement in the 1800's. Later they discovered it made plastic soft, so let's put in the food supply.

That ranges a bit. I cooked mine on consecutive days. One was in for 7-8 days and the other was 8-9 I believe. Both were brined through since the color was perfect. Uneven cuts or short brine times you might end up with gray areas in the middle. Excess fat can also inhibit the brining process.
I used one 2 gallon ziplock per brisket piece which was way too much liquid. I will use the same bag next time and halve the liquid. just need to make sure there is no air in the bag and give them a flip 2-3 times a day. |
