I was lumping in fish with seafood there, btw.

Most red-fleshed fish works great with that kind of sauce.

MEh, I'm ok for tthat kind of "sauce" with seafoods.

As for fish, I guess I'm a snobbish purist.... I avoid butter because the taste can be overwhelming with fish.

I mostly grill my fish on the BBQ. Doesn't require butter or oil...only seasoning.

salmon on a plank is the way to go

edit: as for overpowering the taste... I guess it just depends how much you put on it. Trout, Tuna, Salmon, etc. have pretty strong tastes... they'll come through the sauce no problem.
