They can, but not one human can watch 31 NHL teams and pay attention to every player there is.

Everyone uses stats.

Using basic counting stats is more misleading than just about anything else. And I’m sure I still quote them all the time

Of course not.

I still don't think the numbers are really worth a damn, yet. We need more/better tracking, not this 14 games tracked bullpoop. The problem is it's an almost incomprehensibly huge amount of data to track everything from every game for every player. And on top of that is there's no central database, so everyone is working with different numbers to begin with. There are massive holes in our understanding of what the data we have means. Almost none of it provides context. Partly because it can't, because no one knows what the team's strategy is. Is a team a dump and chase team? Which would necessarily lead to less controlled entries. Is a team more apt to cycle, play a true possession game waiting for better opportunities instead of just throwing it at the net? That would likely lead to lower Corsi and Fenwick numbers than the norm and possibly an artificially inflated PDO.

That’s up to the people using/reading them.

You’re kind of painting all stats with this broad brush that I don’t think is very fair.

The players we perceive as “good” are granted these excuses, but the players we are biased to say are bad are not.

For example you wouldn’t spend 1/10 of the time you do explaining away Girgensons stats as you do Risto’s.
