It is a ribeye, but I unfortunately lean towards medium. Here’s my theory on steak...

Leaner meats med rare
Fattier meats more toward medium because the fat can be chewy... plus you want that fat along the bone to get like charred bacon.

I will be enjoying a nice Willett Rye neat with it though.

Even when he's at his best, I think Sheary is a poor compliment for Kessel to balance out the wings. I thought Rust-Brassard-Kessel looked really good together while they're together. Think Sheary's just a bad fit there.
