No mocking from me. I'm no die-hard BBQ guy. I just like to smoke some stuff once and awhile and enjoy the whole process of it.

Did one brisket it came out awesome, did another and it came out chewy. Brisket is probably one of the hardest to do on a smoker. You waste all that time and if it comes out crappy its so disappointing.

I know it's the lamest thing ever (and will leave me a open to a ton of jokes) but I really love smoked sausage. It might be one of my favorite things in the world.

Never made it or had it. My favorite is probably bone in pork shoulder. Takes forever but almost impossible to do wrong.

Yeah they're definitely nice. I have trouble grilling with charcoal because it always ends up cooking uneven.

If you didn't already, get yourself one of those chimney starters. It makes lighting the coals so unbelievably simple and you don't get that awful lighter fluid taste.

I probably researched the grills for a year on and off before grabbing one. The chimney starter was ordered with the grill and has been great. I bought some of these starter cubes made from wax and it takes just one to get it going. My goal was to make sure that I never used lighter fluid or match light charcoal.

I have actually found cooking on charcoal to be easier for certain things. The insane heat it puts off has made grilling steaks easier for me. Chicken has proven to be a little bit of an issue and I have overcooked it a few times. Definitely has a learning curve though. The grill I got has these charcoal baskets so I can move them around and get the heat where I want it.

It's a passion. I grew up working in a restaurant and still really enjoy good food. I considered going to culinary school when I went back to college seven years ago. Then realized that I don't want to work weekends and holidays for the rest of my life!!!

I have a wild plan to build myself a brick bbq off the corner of my sunroom. There's already a gas line there. Ideally, I want to include a smoker or wood oven or both, but I'm lazy enough that it's a bit of a pipe dream. Plus, I have to rebuild my deck and pour the concrete for it first!

charq for sure has a better taste but I use my grill 2-3 times a week, (frank) dealing with that everytime i wanna cook dinner

Yeah that's the worst. I don't mind dealing with all the mess and work when I'm going to smoke something for like 8-10 hours...but to do it a few times a week just to cook dinner would be a pain in the (frank)ing ass.

I worked in a restaurant for 8 years before deciding the same thing. I liked it a lot but the hours are atrocious.

just got a puppy few weeks ago, trying to scare my company into letting me work from home a few days a week or im gunna look for something else. tired of schleping to an office to do something i can from home

I love the starter. I use 2 for the Chargriller my wife bought me 10 years ago. Not the greatest smoker out there, but is practically set up to cook at 225. Also doubles as a grill for larger gatherings, otherwise I use the UFO for burgers, etc. Never had a gas grill , always charcoal.

It really does. Mustard adds an accent.
Last time I had ketchup was with fries, probably 2 years ago. Tried a spot on my burger on Sunday and just hated it.

I thought about that, but realized I want to enjoy cooking instead of bringing work home with me. I know a few chefs that got burned out after a few years.
