Not that I am an expert or anything, but I have never seen that thing ever. Is that like an off-set smoker or something? I can't figure out how it works. - eichiefs9
Charcoal goes in the bottom left tray. Front knobs are to control air to the charcoal.
Left middle handle is a baffle which controls heat to whatever you are cooking.
Top tray is where you put whatever you are smoking. Top knob for smoke control and also heat. |

You press the little button on top of the can of spray paint and aim it at the squirrel. You'll want to hold it approximately 6" away for an even coat, otherwise dripping may occur. - eichiefs9

You are actually insane. I do add mustard to mayo for tuna but it belongs nowhere near burgers. Also, the only mustard worth anything is deli style with horse radish. - JRR1285

I bbq'd some pork tenderloin on the weekend. Made a sauce of gewürztraminer with honey and yellow curry, with garlic, onion and fresh local peaches and then grilled some more peaches to go on top. #winner |

So many different kinds. I have two friends who have the ceramic egg smokers. They swear by it and say its very easy to use. |

Yeah my buddy's dad has one of the big green eggs and he does (or used to, anyway) a lot of amateur competitions. He loves the thing. I can't justify like $1,200 on something I only use sporadically though.
I'll probably just pick up a Weber Smokey Mountain, since I started off using an ancient knockoff of that one.
The pit barrel is pretty cool actually, you can hang meat from hooks on rebar crossbars or just use the grill grate. Doesn't take nearly as long as a regular smoker and you still get basically the same flavor. |

That's pretty awesome. My GF's parents live down in Charlotte, so I definitely make it a point to hunt down some NC BBQ every time I make it down there. |

I picked up a Weber premium kettle when it was on sale a few months ago. I wanted to start grilling on charcoal and now that I have been researching the kettle I have discovered it can smoke things quite well too. I have been too busy to try but I want to make my first attempt ribs or something similar. My goal is to smoke a brisket but they are too pricey to experiment on. |

Nope, just leave it on the smoker low-and-slow for a real long time...depending on what you're cooking. Brisket can smoke for anywhere between like 12-18 hours. |

I wanted to start grilling on charcoal and now that I have been researching the kettle I have discovered it can smoke things quite well too. I have been too busy to try but I want to make my first attempt ribs or something similar. My goal is to smoke a brisket but they are too pricey to experiment on. - JRR1285
Guy I work with uses the regular-old Weber kettle grill (I just call them UFO's ) to smoke things.
Charcoal and whatever wood you're using goes on one side of the grill and the meat on the opposite side. Stick an aluminum-foil makeshift bowl full of water somewhere too, so the meat doesn't dry out. Definitely the cheapest option, although you won't be able to do a large quantity of meat. |

Did one brisket it came out awesome, did another and it came out chewy. Brisket is probably one of the hardest to do on a smoker. You waste all that time and if it comes out crappy its so disappointing. |

Yeah they're definitely nice. I have trouble grilling with charcoal because it always ends up cooking uneven.
If you didn't already, get yourself one of those chimney starters. It makes lighting the coals so unbelievably simple and you don't get that awful lighter fluid taste. |
