if you are on the ice, you're part of the play.
you could argue the same for posession and any other stat if you take your reasoning.
sure, sometimes a player is not to blame for a goal against or contributing to a goal in favor, but if you look at the 3+ season numbers, and you see a clear pattern, then surely there is some use for the plus/minus stat (at least as much to this as to the posession stats).

what burn is saying is that sometimes you just hop on for a shift where your team scores and you weren't in the play or you made a bad change and your teammate hopped off the ice and a goal is scored against you and you hop on the ice while the other team scores - both are examples of a + or minus is awarded but you really aren't responsible for it

what Max is saying is that over a long run of 3 years - an extended data size, all of this ought to balance out to some degree & therefore if you look at +/- over a long period of time it is a pretty good indicator of how you play defensively relative to your team
