If he does show he can play in the league, every team would offer sheet him and Edmonton won't let it get that far, unless McDavid does not really want to play there and does not sign. But yes, we are all on board for giving up 3 late first round picks for him.

The number required to offer sheet him would be astronomical. Although, signing him for, I don't know, 20 million per season, which is realistically be what it would require, would destroy any team's salary cap. It's not even worth the effort.
If you want to (frank) with the Oilers that bad, then sign him to a 14M offer sheet. They'll of course match, and in doing so, heavily damage their salary structure. Of course, they'll likely extend him July 1st, 2017. Like you said, no way he reaches restricted free agency. Also, it's 4 first rounders.

In the Roswell video of Eichel he was talking to a kid asking him about what number he should wear he mentioned "10, 15, 19, maybe 24"and then the little kid said 100 haha
