I made some pickled eggs and beets over the weekend. They turned out great, especially the beets.

I used 1 cup sugar, 1 cup of the juices from a can of beets, 1 cup vinegar and 15 whole cloves. I wish I had allspice or bay leaves, I think that would of given it a little better flavor. But I was happy with the outcome.

This is very good, I've made it a few times for myself to enjoy.



Chop 1 English cucumber. Sprinkle with 1 teaspoon kosher salt; let sit 10 minutes. Whisk 1 tablespoon rice vinegar, 2 teaspoons each sugar and soy sauce, 1/2 teaspoon sesame oil, 2 sliced scallions, 1 minced garlic clove and a pinch of red pepper flakes in a large bowl. Drain the cucumber and toss with the dressing; season with salt. Top with chopped cilantro.

I let it sit for a day for all the flavors to orgy together.
