also I'm a burrito aficionado myself and through observation I think I've figured out what I (and perhaps you) have been doing wrong:

I usually try to roll them in that flat, elongated shape they serve it up in at the restaurant however I noticed that they roll it up almost in a ball and then a panini press type device gives them the shape.

have you been rolling them up flat and elongated or as balls?

i think elongated, but i have also never seen any of the burrito truck people use a panini press after the steam the tortilla

mine look like...pita sammies when i am done, not round at all. very square...i make square burritos...could that be a thing? is there a market for this?
