So for example if Stamkos skates away from a shoving match people don't say he's not being a leader and sticking up for his teammates.

Yep, if Dion fights a bunch of times and breaks his hand in a fight, that's a big problem for the team. It's bad strategy for Dion to fight. If I was the coach I'd tell him not to.

If you're a captain you are required and expected to fight..... Except for some captains. If you're a big strong guy that is important like lucic it's smart not to fight scrubs..... Except for some bug strong important guys.
