MSG makes things taste good.

This is easily the best jerk chicken I've had outside of Jamaica...

about 3-4 pounds of chicken, chopped into smaller pieces (drumsticks as is, thighs cut in half, etc...)
2-3 medium sweet/yellow/or white onions
6 scotch bonnet peppers (can sub in jalaps or habaneros but flavor wont be quite the same, plus be careful with habaneros)
1 whole bulb garlic, peeled
2 TBSP thyme
2 TBSP ground allspice
2 TBSP brown sugar
2 TBSP salt
2 Tsp ground black pepper
2-3 TBSP fresh grated ginger
2 Tsp cinnamon
2 Tsp nutmeg
1/2 cup olive oil
1/2 cup soy sauce
3-4 TBSP lime juice
1 cup orange juice
1 cup white vinegar
Dark rum (optional)

In a big blender add everything except the chicken, if there is room add some dark rum. Blend until its totally blended. Pour marinade in large plastic bowl, or a ziplock bag, or something like that. Add the chicken to the marinade one piece at a time to make sure they all get completely covered, if leaving the skin on make sure to rub some of the marinade underneath the skin. Cover and refrigerate for at least 3 hours, up to 24 hours.

Grill until cooked, basting with leftover marinade a few times....or bake in oven at 300 for 30 minutes, flip pieces and baste, and bake for another 30 minutes.
If baking in oven, use baking pans with high sides because a lot of fluid will be released and I dont want anyone pissed at me for having a poopty mess
