that's exactly what i do, plus garlic powder, generous on all counts. then when the wife isn't looking, i rub some unsalted butter between the skin and the breast meat. it's better than anything else i've ever tried. biggest difference i find is in using an organic chicken. twice the price but twice the flavour as well.
