If you are deep frying them and are using unrefined oil.

the Refined peanut oil probably has a higher smoking point though, but you still wouldn't be able to use the deep fryer at a high temp. I would guess you would have to run the deep fryer at around 360-370 using refined peanut oil.

There is a reason that restaurants have used Canola Oil for deep fryer for a long time, it's smoking point is around 450
