Gotta go easy on the Montreal steak spice though...so much flavour it can easily overpower everything.

Recently bought Montreal chicken spices...they're pretty good, and also go along with pork chops as well.

Rule #1

When grilling a steak, never, ever close the bbq cover.

And if you use gas it's got be a fairly good quality BBQ to get a good sear.
Anyone who cheaps out should just get charcoal, it can be a poop one since you regulate the heat with the amount of charcoal.

For sure. Some restos will pre sear a bunch of proteins right before the rush and finish in the oven, have all your burners ready for sides.
