My best dishes:

Pizza(different toppings, love doing it with prosciutto, red peppers, and real mozza, and then throwing in some arugula and olive oil at the end)- with my own sauce and crust.

Planked salmon with a maple/mustard/chipotle/whateverthe(frank)else glaze.

Beer can chicken

and I make my own salsa/tzatziki, when it's called for.



I also make an awesome rotisserie turkey for thanksgiving, and bacon-wrapped eggs for special breakfasts.

Cooking food with Maple syrup is something I just discovered! Other products I never thought about using: Jam or Jelly for glazes or sauces. I also use a lot of pastes now, some I actually make at home from the garden. Haven't bought a salad dressing from the store in months, all from herbs in the garden mixed with oils/vinegars/lime or lemon juices or jarred/pickled vegetables.

I'm always skeptical of those things that's why I'm asking if he's got experience with it.


I know what I gotta do to lose weight. a few years ago I shed 40lbs.

Cut back on salt, cut out all sodas, cut back on simple carbs, do more exercise(even a marginal increase over a long time makes a difference).

problem is, last year there was lots of stress, and I went back to eating more crap/doing less exercise, so I put back 10lbs... I'm down a few now, but gotta keep working on it. Big problem with working full time is being able to plan out your meals for the week... and adding a new dog to the equation- while it helps with the exercise- wreaks havoc on the timing of things.

nice meals btw.

fajitas, spaghetti, taco's, steak/asparagus/potatoes, chicken wraps, brocolli and cheese stuffed chicken, chili, BBQ perogies, stir fry's - those are the main ones i roll with.

Try Bacon wrapped water chestnuts......all you need is:

1 cup ketchup

1 cup brown sugar

1 teaspoon Worcestershire sauce

A couple cans of the chestnuts

and a poopload of bacon!

yup, I never buy dressing. ever.

ps- if you want oil and vinegar to mix, and not seperate... add in a bit of mustard. It acts as a emulsifying agent, and keeps them in a nice, thicker sauce.

easiest "dressing" I make- when I start a salad, I smash and dice a couple of cloves of garlic, throw them in the salad bowl with olive oil and lemon juice, mix them up, and then throw all the other ingredients in as I finish with them.

Favourite multi-purpose dressing/sauce/whatever...

Take lots of cilantro or parsley(for those who can't stand cilantro), cut it up with a few cloves of garlic, and a cayenne pepper, put it in a jar with vinegar, lemon juice, and olive oil, and let it sit for a day... I find it holds pretty well for a month, and you can use it in salads, on meat- either as a finishing garnish or while grilling, or just as a dip.

plus another decent largie and then a couple fair sized rockbass

I make a mean bacon wrapped turkey with Guinness stuffing.

The night before, melt butter and add finely chopped onions, garlic, thyme and S&P and place it in the fridge over night. Before wrapping the turkey in bacon (the following day) I take slivers of the garlic butter and place them under the skin of the turkey by making small slits in the skin.

Making the stuffing the night before is also key so that the flavours have a chance to come together.

Cook at 400c for the first 30 mins and reduce heat to 325c and cook for 20 mins per pound.

NOTE: ALWAYS cook the bird with the innards in the roasting pan and use a broth (or veggie water) when making the gravy.

Nope, not even subway, we go to a great deli and bakery nearby and purchase cold cuts and buns.

edit: picked our first batch of boston lettuce from the garden today, romaine is coming up soon.

oh i let the gf handle the pastas.. she actually makes pasta.. from scratch.. so yeah.... i bow to her on that one

generally i just randomly look for a recipe online.. look at it.. try it as is.. then start to change the things i dont like.. or add something..

being summer tho i do tend to lean towards the grill more often than not

I've caught 4 pounders before and this was bigger. considerably.

Bacon wrapped eggs:


equipment required: muffin pan
(using those muffin paper things also makes cleanup a helluva lot easier)

grease up the muffin pan, put bacon along the rim of each thing to make the walls, and then in the middle to make a base. The fewer holes you see, the better the final product.

Bake it breifly to let the bacon crisp up.

put some cheese in the bacon cups, crack an egg in it, or scramble some eggs with whatever ingredients you like, and pour them in cups. You can put more cheese/bacon on top.

throw it back in the oven until it's done.

I prefer scrambled eggs in there- they puff up amazingly, and cook more evenly.

Use a spoon to scoop them out- go along the edges first to make sure nothing's sticking. I plate them with home fries or salsa.

easy to make, but if you don't have the paper forms to put inside, clean-up's a female dog.

I usually only look at recipies for inspiration, or if I'm not sure how long something I'm using should be cooked.

Only recipe I follow is for beer-cured salmon.
