If it hardens put the jar in boiling water, it'll return to normal. I use honey for all kinds of things, salad dressing, sweetener, toast.

Only way I use it right now...except sometimes for marinades.

Take a white fish filet (sole, pangasius, etc) and make a little marinade with honey, fresh ginger and soja sauce, put the filet with the marinade on it in tin foil, in the oven for about 10-12 minutes. pretty good.
