Light dusting of MTL spice and garlic powder is all I do.

High heat, lid closed, 3.5-4 min/side should be med rare depending on the thickness.

Do NOT leave the BBQ unattended.

If you see fire, you may have to flip sooner, but keep timing the sides.

I use the same method, except about 5 minutes per side, again depending on thickness and fat content.

I substitute the MTL spice for Lawry's seasoning on pork.

I've had cod, but never on the BBQ. I do a salmon on the BBQ once a year. You get a full fish from the natives for $10.

There is no substitute for Lester's Montreal Steak Spices, sorry. Lawry's makes some good spices to be certain, but not comparable. Have a nice day.
