It melts and turns into oil. Try it, I'm serious. It makes amazing fries and they're golden brown. It's the absolute best way. Keep dumping blocks of lard in melting them.

Coconut Oil looks like Lard too but is much healthier as it's burning rate is much higher... for those with health issues... it doesn't taste like coconut either.

I've used canola oil with good results. Just make sure to potatoes are good and dry when you put them in. Other than that maybe play with the thickness of your cut or types of potato.

No he means dry them after you wash them... that is if you cut them yourself... or thaw them out from frozen

i understand that.. but from what im reading online alot of people say to fry them twice,, hotter the second time. im using a baking potato btw..

Some do Refry.. but they are better fresh imo...

mmm potatoes... Speaking of which does anyone have the secret for making the perfect french fry? i cant seem to get em crispy enough

Fresh cut potato fries, soak them in water for an hour, put in freezer for 2-3 hrs, drop in hot oil for 5mins, take out of oil for 5mins, then cook till golden brown.
I know it takes time, but for fresh potato thick cut its the best, add cheese and gravy for an awesome poutine.
