Gonna be a fun one against Turbo and the boys.

I'm gonna beat this one to death, but nobody, even if he was younger, should expect Sid to look like Sid just yet. Missing a whole summer of regular conditioning because of surgery, no pre-season, coming back only to then miss more time with covid? Age aside, it's going to take any player a bit of time to find their legs and groove. 12 games is barely getting warmed up.

Yea I agree that Sid can still bring it. He's just not a 100 point player anymore. We can expect not to get good Geno until after the Olympics.

Honestly, I don't know that he's not a 100 player anymore. He's not himself and he's one point under a point-per-game. I still think he's capable of 100 points. Obviously he won't hit it this season because of games missed, but I think he can pace 100 points.

Yea I definitely think he's a PPG player still. But for him to hit 100 points again I think he would need an elite RW to go along with Guentz on his LW. If he does do it again I'd be pleasantly surprised.

He’s also shooting 2.5 times a game which is like.. 1.5 shots per game more than Jumbo at around the same age. Huge difference

Last year it was around 3 shots a game. Just simply not enough for a player as talented as Sid IMO.

He had five last night. I truly think he’s just getting his footing and we’ll be forgetting all about this I like another 15/20 games.

2 things:

1. I picked up some Meat Mitch bbq sauce from my local World Market
2. I am attempting to recreate Prince Street Pizza's Spicy Spring slice tonight one I get back from playing some puck.

I agree. He's still not up to speed yet. I don't think he had much activity before or during training camp because of the surgery. Not going to be easy for a 35 year old to get into game shape without camp. I'll say one thing however, his passing is still insanely good. Pinpoint passes every shift. Forehand, backhand....doesn't matter. 30 foot passes are tape to tape. I don't even think it will be 15/20 games.

Nice. I'm curious what you'll think. I really liked it. It's got a good mix of sweet and spicy kick. I'm very curious to see the pizza.

Pizza was okay... I (frank)ed up the dough. It was way too dense, not light, airy and crisp. The sauce was an amazing fra diavalo sauce I made with some jarred calabrian peppers. I also cut the pepperoni too thick I think. It didn't cup like I wanted them to.

First try though.

Looks good though!

I have a good recipe for sheetpan pizza dough if you want it. It's super easy and only takes three hours.

I was going to try Kenji Lopez’s recipe. He does all kinds of experiments on his recipes until he perfects them.

What one do you use? Do you use 00 flour or bread flour?

I have a few different recipes I use depending on the style I want. I only use 00 when I want Neapolitan style, AP for NY style. I use bread flour for this one...

The recipe isn't super dense or super light. It's in between, but it's really simple and good. This isn't the prettiest pizza. Like I said this is a quick and easy one, but the crust gets buttery from the oil and has a good crisp/crunch on it.

It's a solid dough recipe. I don't use their sauce recipe, but I build the pizza the way they suggest. The only thing about this recipe I found is is that it needs to bake longer than it says and if you're doing to use it in the pan like that, cover it with foil for a good ten minutes otherwise you'll well done on top and underbaked underneath.

Margherita Natural Case pepperoni.

Going to try Boars Head or Vermont next time, but I think I just sliced it too thick. You could see them want to cup, they just couldn't.

That looks like a solid thick crust pizza. You make it yet?
