Can't wait for all microbreweries to brew all sorts of German beers next year to celebrate the 500 years of the Purity Law.

If you are referring to IPAs, they are an acquired taste. Keep trying different ones until you find one you like.

if we go by the german purity law (i assume that's what he's referring to?) not a lot of the beers we drink would be considered beer. belgian beers add candi sugar, etc etc.

I got a new kit that has a glass carboy to do secondary fermentation. But reading online it looks like its really not necessary unless I plan on dry hopping, which I won't be doing at this point. Do you leave your beer in the primary until it's ready to be bottled?

Depends on what I'm brewing but yes that's the case most of the time. I've never dry hopped before, something I'll looking into next year.

If I'm not keeping it in the primary it's going into an oak cask.
